Learning Objectives

The education goal of the course is to offer to the student the basic knowledge of food composition, nutritional quality, chemical and metabolic changes.

The course will be held mainly by means of frontal lessons.

Course syllabus: foods, nourishings and nutrition; inorganic nourishings; organic nourishings; food supplements, pharma-foods, chemical, physical and biological changes of nourishings, organolectic characteristics of food; basic knowledge of feeding science; classification and chemical composition of: cereals, fruit and vegetables, oil, milk, foods very rich of nutraceutical compounds (coffee, tè and cacao
